The Green Knight is being quite a jerk here. Essentially, he's testing the knights to see how willing they are to lop off a stranger's head. Though the GK knows perfectly well that he'll be fine despite getting beheaded, the Knights o' the Round certainly don't know that. To them, this weird green guy is just begging for an assisted suicide.

Which ultimately makes Gawain kind of a dick. In the poem, he's more than willing to decapitate this guy at the drop of a hat. Bloodlust, much?
